Baked Buttermilk (Fried) Chicken

Marinade:
  • 2  Boneless Skinless Chicken Breasts (Thawed)
  • 1/2 Cup Buttermilk
  • 1 teaspoon Salt 
  • 1/2 teaspoon Pepper

Place thawed breasts into 1 quart plastic bag with buttermilk, salt & pepper. Seal and leave in refrigerator overnight or for at least 6 hours.

Make breading station...

Dish 1 contains:
  • 1/2 cup all purpose flour 
  • 1 teaspoon paprika 
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper 
Dish 2 Contains:
  • 1 egg whisked with 1 T water 
Dish 3 Contains:
  • 1/2 cup seasoned bread crumbs or seasoned panko crumbs 
Line rimmed baking sheet with parchment or foil. Spray with Pam. Remove 1 breast at a time from buttermilk marinade let marinate mostly drain from chicken. Dip in flour coating both sides completely,  then dip in egg mixture coating both sides, then dip in bread crumbs coating both sides of the chicken breast. Set on baking pan. Spray tops of chicken with cooking spray to help brown. Bake in 375ºF oven for 35 to 45 minutes or until chicken is done.
