Quick Tomato Chili

  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 celery ribs chopped
  • 2 cloves garlic minced (1 teaspoon prepared garlic)
  • 1 sweet (green, red, or yellow) pepper chopped
  • 1 package mushrooms sliced
  • 1 15oz can red kidney beans drained and rinsed
  • 1 15oz can white kidney beans drained and rinsed
  • 1  16oz can diced tomatoes tomatoes (do not drain)
  • 1 1/2 Tablespoon chili powder
  • 1 1/2 tablespoon cumin
  • 1 22.8 oz can tomato soup
  • 1 can water

Brown ground beef with onion, celery, garlic, sweet pepper. Drain.  To the beef mixture add mushrooms and beans, cooking another 5 minutes, stirring occasionally. Add diced tomatoes. Add spices. Mix. Add can of tomato soup and full can of warm water.  stir until well combined. Heat to boil then reduce heat, cover and simmer 30 minutes.

This will make enough for two meals plus for you kids. Remove half to a freezer container leaving 1/4 inch air space at top. Label and freeze.
