Double Crust Pizza Pie For 2

This double crust pizza is one of the family favorites. It's very filling and not terribly difficult to make.  Serving it up with a big garden salad makes it complete.

  • 1 - 12 inch pizza crust (1 Pillsbury Crust works fine)
  • 1 8oz can pizza sauce
  • 1/2 pound ground mild italian sausage meat (or hamburger)
  • Variety of pizza toppings of your choice(mushrooms, onions, pepper, olives, pepperoni etc.)
  • 4 oz sliced Mozzarella cheese (or 1 cup shredded)
  • 1 cups grated Parmesan Cheese
  • 1 1/2 teaspoon Italian Season
  • 1 egg beaten and mixed with  1 teaspoon milk
Brown ground sausage meat or Brown and season hamburger with Italian season, salt and pepper to taste. Drain and place in small bowl. Set aside. Sauté optional vegetables, such as onion garlic and pepper, in small amount of olive oil about 5 minutes. Add meat back to sauteed vegetables. Add pizza sauce to meat and vegetable mixture. Stir and set aside for now.

Spray cookie sheet. Shape crust into a rectangle on pan then cut in half. Sprinkle 1/2 piece of crust with ½ of the Parmesan Cheese. Dump the meat mixture in center of the crust (on top of Parmesan cheese) leaving 1 inch around edges. Top meat mixture with the remaining optional toppings, such as fresh mushrooms, pepperoni, black olives, etc). Add a layer of Mozzarella cheese (sliced or grated). Sprinkle with the remaining Parmesan Cheese. Lay second 1/2 crust over the top of all ingredients stretching to edges of meat. Brush edges of bottom crust with a bit of the egg mixture. Fold the extra bottom crust over the top of the top crust. Press with a fork around the edges to seal (like you would a double crust pie). Cut steam holes in the top crust. Bake 15 minutes at 400° F . Brush top of crust with egg mixture and bake another 15 minutes. Remove from oven and allow to cool slightly (about 15 minutes) before cutting.
